COOKING WITH TKO: BAKED EGGS
My favorite meal is breakfast, hands down. Whenever I'm browsing Pinterest I always catch myself clicking and pinning yummy looking breakfast meals. The other day I saw a fun recipe for baked eggs which reminded me of this crazy good Spanish breakfast I had while honeymooning in Amsterdam. So I decided to try out my own version, and OH MY GOSH it was so good.
WHAT I USED
- Eggs
- Breakfast sausage
- Ham
- Thinly sliced soppressata (or any type of spicy sausage)
- Tomato
- Onion (chopped and caramelized)
- Cheese (I used cheddar and grated parmesan cheese)
- Cayenne pepper
- Thyme
- Parsley
- Salt and pepper
- Baguette (sliced and toasted)
HOW TO MAKE IT
STEP 1: Preheat your oven to 375 and grab some small oven safe pans.
STEP 2: Lightly butter the pans and start layering the food in there. Have fun with it, you can't go wrong. I placed a slice of ham and soppressata at the bottom, followed by one egg, then I added some sausage (make sure it is already cooked), two more eggs, cheese, some caramelized onions and thinly sliced tomatoes. Top it off with a light dusting of cayenne pepper (to your liking), some fresh thyme, parsley and salt and pepper to taste.
STEP 3: Place into the oven and cook for about 12-15 mins or until the eggs look nice and cooked. Serve with a side of toasted baguette slices and a coffee! It was so insanely good and easy to make. ENJOY!
